French Onion Soup


Whenever my husband and I are visiting NYC, we have to stop at the restaurant, La Bonne Soupe and have a bowl of their French Onion Soup.  Or as they call it, Onion Soup!  It is the most comforting bowl of deliciousness after a long day of walking through the busy streets of the city!

My mother in-law has been going to this restaurant since the 70's and says nothing about it has changed!  There is still only about 2 inches between each table.  The waiter has to pull the table away from the wall so the customer can squeeze in between the tables to sit down!  It's truly what I imagine most restaurants to be like in the city.  Small, a bit cramped, noisy, and the most delicious food!



The restaurant is always busy!  If you're not used to eating in the city, you might think people are listening to your conversation or bothered by how close they have to sit to one another.  But really the opposite is true!  No one seems bothered and most of the conversations are in happening in French, so there's no way I know what they're talking about!

Though, I have to admit, one freezing cold evening my husband (fiance at the time) and I had just come from seeing The Rockettes Christmas Show and we were seated next to a table of old men talking about their days as dancers on Broadway!  Only in NYC!


What I love most about French Onion Soup is the cheese.  The ooey, gooey, strings for miles cheese! The caramelized onions are great and so is the softened, juice-soaked bread, but that cheese....


I mean......#drool!


Though it may appear to be complicated, the soup is relatively easy to make.  It's a great soup for a chilly day at home by the fire or a comforting twist to the usual weeknight meal. I hope you enjoy making this soup as much as I enjoy eating it!

Though it may appear to be complicated, French Onion soup is relatively easy to make. It's a great soup for a chilly day at home by the fire or a comforting twist to the usual weeknight meal. I hope you enjoy making this soup as much as I enjoy eating it!

INGREDIENTS:

  • 1 1/2 lbs. onions, thinly sliced.
  • 3 Tbsp. butter
  • 1 Tbsp. olive oil
  • 8 cups beef broth
  • 1 tsp. salt
  • 1/4 tsp. sugar
  • 3 Tbsp. flour
  • 1/2 cup dry white wine
  • salt and pepper, to taste
  • cognac, optional
  • 1 loaf crusty french bread, cut into thick rounds
  • 1-2 cups swiss cheese, shredded (or 1-2 slices per bowl)

INSTRUCTIONS:

  1. In a large soup pot, melt the butter and olive oil over low heat. Add the onions and saute, covered, for 10-15 minutes.
  2. Increase the heat to medium. Add the salt and sugar. Cover and cook, stirring frequently, for 10 minutes until the onions turn golden brown. Sprinkle the flour over the onions. Stir and cook until fully coated (1-2 minutes). Add the wine and broth. Simmer 30-40 minutes, adding salt and pepper to taste.
  3. Pre-heat the broiler. Place 1-2 slices of bread in the bottom of an ovenproof bowl. Ladle the hot soup over the bread and top with cheese. Place bowls on baking sheet and carefully place into hot oven. Watching carefully, remove from oven once cheese has melted and started to brown.
