It may seem strange to do a photo recipe, but meatballs are pretty self-explanatory! Here's my recipe for a delicious twist on the classic meatball sub!

Chicken Cheesesteak Mini Meatball Sliders
prep time: 10 MINScook time: total time: 10 mins
INGREDIENTS:
Meatballs
- 1 lb. ground chicken
- 3/4 cup unseasoned bread crumbs (I love whole wheat!)
- 1 egg
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. chili powder
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1-1 1/2 tsp. dried parsley
Build Your Sandwich
- mini sandwich rolls (I used split top potato rolls)
- peppers and onions, thinly sliced & sauteed.
- provolone cheese slices
- mayonnaise (optional)
- paprika (optional)
INSTRUCTIONS:
For The Meatballs
- Combine all meatball ingredients in a large bowl and mix thoroughly.
- Using a mini cookie scoop, scoop and roll meatballs. Place on a parchment-lined cookie sheet.
- Bake @ 400 degrees for 20-25 minutes until browned and cooked through. Remove from oven and let cool for 1-2 minutes.
Build Your Sandwich
- In a 9"x 13" pan, place rolls cut side up if using top-split rolls. Place a few sauteed peppers and onions in the bottom of the rolls, carefully place meatballs on top, and then top with a slice of cheese.
- Place pan into oven and cook until cheese is just melted and starting to brown. DO NOT OVERCOOK!
- Remove from oven, spread sandwich with mayonnaise, and sprinkle with paprika, if desired. Enjoy warm!
