Chicken Cheesesteak Mini Meatball Sliders | Photo Recipe

Check out my super easy, super yummy meatball recipe!



It may seem strange to do a photo recipe, but meatballs are pretty self-explanatory! Here's my recipe for a delicious twist on the classic meatball sub!


Place meatball ingredients in a large bowl.

Combine and scoop using a mini cookie scoop.

Place meatballs on prepared cookie sheet.

Place meatballs on prepared cookie sheet.

Combine sandwiches and places in baking pan.

Top each sandwich with a cheese slice.

Heat until cheese melts.

INGREDIENTS:

Meatballs
  • 1 lb. ground chicken
  • 3/4 cup unseasoned bread crumbs (I love whole wheat!)
  • 1 egg
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. chili powder
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1-1 1/2 tsp. dried parsley
Build Your Sandwich
  • mini sandwich rolls (I used split top potato rolls)
  • peppers and onions, thinly sliced & sauteed.
  • provolone cheese slices
  • mayonnaise (optional)
  • paprika (optional)

INSTRUCTIONS:

For The Meatballs
  1. Combine all meatball ingredients in a large bowl and mix thoroughly.
  2. Using a mini cookie scoop, scoop and roll meatballs. Place on a parchment-lined cookie sheet.
  3. Bake @ 400 degrees for 20-25 minutes until browned and cooked through. Remove from oven and let cool for 1-2 minutes.
Build Your Sandwich
  1. In a 9"x 13" pan, place rolls cut side up if using top-split rolls. Place a few sauteed peppers and onions in the bottom of the rolls, carefully place meatballs on top, and then top with a slice of cheese.
  2. Place pan into oven and cook until cheese is just melted and starting to brown. DO NOT OVERCOOK!
  3. Remove from oven, spread sandwich with mayonnaise, and sprinkle with paprika, if desired. Enjoy warm!
