Autumn Spice Cookies
I am so excited for the yummy, warm, comforting foods of fall. Since the weather has lately decided to be balmy, muggy, and dreary, I had to quench some of my fall-time cravings by making these cookies. And they couldn't be simpler! My friend Liz, of Love, Lizzie, graciously shared this recipe with me last year and it is now one of my new favorites! And don't they look lovely with my fall decor?!
Autumn Spice Cookies

1 pkg. sugar cookie mix
1 tsp. pumpkin pie spice
Icing:
~1-1.5 cups powdered sugar
~1 tsp. apple cider
Make sugar cookie dough according to the instructions on package, adding in the pumpkin pie spice. If making cut-out cookies, wrap the dough in plastic wrap and place in the fridge for 1 hour. Roll out, cut out, place on baking sheet, and bake according to the instructions.
Mix icing until reaching desired consistency (not too thin, not too thick). The original recipe called for butter, which I omitted and still love the icing!
