Fresh Peach Cobbler
I know, it's 3 o'clock in the afternoon, but I am totally munching on a bowl full of peach cobbler right now. I won't deny it...just don't tell my husband. ha! We had picked some peaches at a local orchard this past weekend and they needed to be eaten. I love ripe, juicy peaches right off the tree, for lunch, a snack, etc. But I would totally rather have them covered in sugar and surrounded by a light, sweet, buttery batter. You, too? See, I'm not crazy. I remember asking my mom to make me a peach cobbler instead of a birthday cake one year for my birthday. And I think I was 13, so I totally knew what I was doing! I love warm desserts...and don't even think about asking me if I want ice cream on top of my cobbler. I take after my father in that aspect, because I don't want the ice cream to "ruin" (his word, not mine) my cobbler. (Can ice cream really ruin things? I don't know.) If I'm eating something warm and delicious, I don't want any ice cream "freezing" it up!! Enjoy my most favorite dessert ever!!
Fresh Peach Cobbler
6-8 servings
6 Tbsp. butter
3/4 cup flour
2 tsp. baking powder
dash salt
3/4 cup milk
2 cups sugar, divided
2 cups sliced peaches
Preheat oven to 350. Place butter in bottom of a deep baking dish and place in the oven to melt. In a medium bowl, combine 1 cup sugar, flour, baking powder, and salt. Add milk; stir well. Pour batter over melted butter. DO NOT STIR. Combine peaches with remaining sugar and spoon over batter. Again, DO NOT STIR. Bake for 1 hour and serve warm.
I guess you could scoop some ice cream on top...but only if you want to "ruin" it!! :)
