I've been on a real baking streak this week! Now that the holidays are in full swing, I am constantly pulling out my mixer and whipping up some cookies or this Gingerbread Cake. But this week, I was in the mood for something warm and comforting.
An apple cranberry crisp was just what I was craving!
Once the Fall hits, I love making dishes with apples. Honey baked apples, apple pie...
But for a winter holiday twist, I decided to add cranberries to my typical apple crisp recipe and what came out was a delightfully sweet, slighty tart crisp with a crunchy brown sugar and pecan topping!
Because of the relatively long cooking time, the juices really had time to thicken and develop. It was more like a cranberry syrup and absolutely delicious!
I have to admit, we had this as a side dish during dinner! It was a nice change from our usual peas or green beans and was a sweet treat for my girls!
Also, aren't those ruby red cranberries gorgeous?!! They really "pop" in flavor and color!

Cranberry Apple Crisp

A deliciously sweet and tart fruit crisp! This recipe is filled with apples and cranberries, topped with an amazing brown sugar, oats, and pecan topping. A simple dessert or side dish perfect for the holiday season!
INGREDIENTS:
Filling
- 3 cups baking apples, unpeeled and chopped
- 2 cups fresh or frozen cranberries
- 3/4 cup sugar
- 3 Tbsp. flour
Topping
- 1 1/2 rolled oats
- 1/2 cup flour
- 1/4 cup brown sugar, packed
- 1/4 cup pecans, chopped
- 1/2 cup butter, melted
INSTRUCTIONS:
- Preheat oven to 350 degrees. Grease an 11" x 7" baking dish.
- Combine filling ingredients in a bowl. Pour into greased baking dish.
- Combine topping ingredients until crumbly and sprinkle over top of filling.
- Bake 50-55 minutes until bubbly and fruit is tender.
