Pan-Roasted Corn


I recently came across this recipe on one of my favorite blogs, My Blessed Life, and it has seriously changed the way I look at corn!  I've always loved the occasional corn on the cob slathered with butter and sprinkled with salt during the summertime, but didn't really do much else with plain frozen corn besides nuke it in the microwave.

This recipe has changed all that!

This recipe adds some richness, depth, and a little heat to those juicy little kernels and makes an absolute melt-in-your mouth side dish!

Pan Roasted Corn

INGREDIENTS:

  • 2 Tbsp. butter
  • 1/2 onion, sliced
  • 1 garlic clove, minced
  • 3 cups corn, fresh or frozen
  • pinch ground cayenne pepper
  • salt & pepper, to taste

INSTRUCTIONS:

  1. Heat a large saute or cast-iron skillet to medium heat. Add butter and melt.
  2. Once melted, add onions. Cook until softened and add garlic.
  3. Cook 1-2 minutes, then add corn.
  4. Stirring occasionally, cook until pan is "dry" and corn is slightly charred.
  5. Season with cayenne pepper, salt, and pepper.
  6. Serve immediately.

Nutella Rolls with Cream Cheese Icing


Don't these just look delicious?
I had been looking around Pinterest the other day and came along these fantastic looking rolls.  It helped that the recipe has Nutella in the title!  I love anything to do with Nutella!

Nutella Rolls with Cream Cheese Frosting

Rolls:
1 8ct Pillsbury Buttermilk Biscuits
Nutella
Flour and sugar for rolling

Cream cheese frosting:
3 oz cream cheese, softened
1 tsp. vanilla
1 cup powdered sugar

Pre-heat oven to 350 degrees.  Spray a muffin pan with non-stick spray and set aside.
Open biscuits, seperating each biscuit.  Flour and sugar rolling surface and roll out each biscuit into a flat round.  Spoon ~1 Tbsp. Nutella onto each biscuit round and spread until round is covered with Nutella.  Roll each round up (looks like a burrito) and cut into 3 equal pieces.  Place 3 pieces into 1 muffin cup.

Bake for 15 minutes.

Remove from oven and allow to cool for 2-3 minutes while you prepare the frosting.
Using a whisk or hand mixer, blend all frosting ingredients together until smooth.

Remove rolls from the muffin tin and spread with frosting while still warm
