My cousin and I are in charge of rolls and a vegetable this year for Christmas dinner. So, I decided to bring my delicious Pan-roasted Corn and these simple, but delicious rolls!
I came across this recipe for Icebox Dinner Rolls in the Christmas 2012 edition of Southern Living. The pictures they had for the rolls made them look so buttery and delicious. I knew they would be perfect for our holiday meal!
Why does a brush with butter on it make everything look so good? *sigh*
The dough sits overnight in the fridge and is so simple to make. I just whip the ingredients up the night before or even the morning of if I completely forget to make these ahead when I'm running short on time!

Ice Box Dinner Rolls
A deliciously simple roll recipe perfect for any meal!
INGREDIENTS:
- 1 cup boiling water
- 6 Tbsp. butter, melted
- 1/4 cup sugar
- 1 tsp. salt
- 2 1/4 tsp. dry active yeast
- 1/4 cup warm water
- 1 large egg, lightly beaten
- 2 cups all-purpose flour
- 2 cups whole wheat flour
- 2 tbsp. butter, melted
INSTRUCTIONS:
- Pour boiling water over 6 Tbsp. melted butter and next 2 ingredients in bowl of a heavy-duty electric stand mixer, and stir until combined and sugar and salt are completely dissolved. Let stand 10 minutes.
- Meanwhile, combine yeast and warm water in a 1-cup liquid measuring cup; let stand 5 minutes.
- Add yeast mixture and egg to butter mixture; beat at low speed until combined. Gradually add flour, beating at low speed 2 to 3 minutes or until flour is blended and dough is soft and smooth.
- Place dough in a lightly greased bowl, turning to grease top. Cover and chill 8 to 24 hours.
- Turn dough out onto a lightly floured surface and knead until smooth and elastic (about 1 minute). Gently shape dough into 60 (1-inch) balls; place 3 dough balls in each cup of 2 lightly greased 12-cup muffin pans. Brush rolls with half of melted butter.
- Cover pans with plastic wrap, and let rise in a warm place, 30 to 45 minutes or until doubled in bulk.
- While dough is rising, pre-heat oven to 400 degrees.
- Bake rolls for 8 to 12 minutes or until golden brown. Brush with remaining melted butter. Serve immediately.
