Southern Living's Icebox Dinner Rolls

* Update: I have updated the recipe a little from the original and decided to update the pictures and post since this was first published.  Enjoy!

Forget the ham, who cares about the sweet potatoes, and, I'm sorry, but your failed attempt at a jello mold does not impress me.  But rolls...oh yeah.  I'm all about the bread during the holidays!!

Rolls in a basket

My cousin and I are in charge of rolls and a vegetable this year for Christmas dinner.  So, I decided to bring my delicious Pan-roasted Corn and these simple, but delicious rolls!

Rolls in the pan

I came across this recipe for Icebox Dinner Rolls in the Christmas 2012 edition of Southern Living.  The pictures they had for the rolls made them look so buttery and delicious.  I knew they would be perfect for our holiday meal!

Why does a brush with butter on it make everything look so good?  *sigh*

Brushing butter on the rolls
The dough sits overnight in the fridge and is so simple to make.  I just whip the ingredients up the night before or even the morning of if I completely forget to make these ahead when I'm running short on time!

Gosh, who doesn't love a good butter slathering picture?

Ice Box Dinner Rolls

A deliciously simple roll recipe perfect for any meal!

INGREDIENTS:

  • 1 cup boiling water
  • 6 Tbsp. butter, melted
  • 1/4 cup sugar
  • 1 tsp. salt
  • 2 1/4 tsp. dry active yeast
  • 1/4 cup warm water
  • 1 large egg, lightly beaten
  • 2 cups all-purpose flour
  • 2 cups whole wheat flour
  • 2 tbsp. butter, melted

INSTRUCTIONS:

  1. Pour boiling water over 6 Tbsp. melted butter and next 2 ingredients in bowl of a heavy-duty electric stand mixer, and stir until combined and sugar and salt are completely dissolved. Let stand 10 minutes.
  2. Meanwhile, combine yeast and warm water in a 1-cup liquid measuring cup; let stand 5 minutes.
  3. Add yeast mixture and egg to butter mixture; beat at low speed until combined. Gradually add flour, beating at low speed 2 to 3 minutes or until flour is blended and dough is soft and smooth.
  4. Place dough in a lightly greased bowl, turning to grease top. Cover and chill 8 to 24 hours.
  5. Turn dough out onto a lightly floured surface and knead until smooth and elastic (about 1 minute). Gently shape dough into 60 (1-inch) balls; place 3 dough balls in each cup of 2 lightly greased 12-cup muffin pans. Brush rolls with half of melted butter.
  6. Cover pans with plastic wrap, and let rise in a warm place, 30 to 45 minutes or until doubled in bulk.
  7. While dough is rising, pre-heat oven to 400 degrees.
  8. Bake rolls for 8 to 12 minutes or until golden brown. Brush with remaining melted butter. Serve immediately.
